First Course - Spring radishes, lettuces, and harissa dijon vinaigrette

Second Course - Smoked lamb shoulder, basmati, asparagus & peas

Instructions

First Course - Dress salad with vinaigrette and salt to taste

Second Course - Preheat oven to 400F. Place aluminum-covered pan in the oven for 15 minutes. Remove and let rest covered for 5 minutes

Third Course - Keep refrigerated until ready to eat

Each cocktail has been created by the chef to best complement their Supper Club menu. Each wine & beer offering has been carefully curated to do the same. Beverages will be available for purchase every Monday until midnight for delivery with the coming week's meal.

From Bon Appetit - "This unfiltered wine is made of País, a native Chilean grape, farmed with low-intervention methods, and exhibit a hazy ruby color while spontaneous fermentation contributes a whisper of effervescence.  Pipeño is meant to be drunk young, and this bottle speaks of the farmers who enjoy pipeño on the regular. It’s enormously gulpable, bright berries and crisp acidity all the way down."

Xarel-lo, Macabeo, Monastrell Vinyes Singulars is a project born in 2011 from the estate of Cal Batlle, cultivated by the family since 1405 in Penedes, Spain. Al rosa que l'amor s'hi posa is a natural sparkling wine made with Xarel·lo, Macabeu and Monastrell by the ancient method , with no added sulfites.

This orange wine is composed of 75% müller thurgau, 5% sankt laurent, 15% riesling, and 5% grauer burgunder from vines aged between 22-28 years old planted in calcareous clay soils. The juice and skins were macerated for 8 weeks, giving it a decent tannin structure. The flavors are clean and dry, with hints of dried stone fruits and orange peel. Organically grown, low-intervention/natural wine, vegan.

This is an amazing Grenache-3-ways-co-ferment from Phillippe Formentin of Opi d’Aqui, who works around Clermont l’Hérault in Southern France’s Languedoc. 40% Grenache Noir, 30% Grenache Gris, 30% Grenache Blanc hand-harvested from a single-vineyard plot of .5Ha, the grapes undergo cold carbonic co-maceration for 3-4months before transferred to stainless steel tank where élevage lasts for 6 months. Bottled unfined, unfiltered, with no additional SO2.
