First Course - Ajo Arriero - poached cod, olive oil, ragout of spring squash

Second Course - Crispy suckling pig with rose-scented tximitxurri

Third Course - Basque Cheesecake with salted Chantilly



Instructions

First Course - Bring to room temp before serving. 

Second Course - Bring to room temperature 30 minutes to 1 hour before reheating. Preheat oven to 475 F. If you have convection, flip that switch. Place on a metal sheet pan and bake to a deep mahogany color. This may take 7-10 minutes, depending on your oven. Let rest until skin crisps, about 3 minutes, and spread with Tximitxurri

Third Course - Top with salted Chantilly cream and enjoy!
