First Course - white asparagus veloute - crème fraiche & fine herbs

Second Course - Roasted chicken breast - white asparagus, oakwood shitake, napa cabbage, spring onion, miso chicken broth & sesame-chile oil

Third Course - rosewater panna cotta - blueberry compote



Instructions

First Course - This soup can either be enjoyed chilled or warmed on the range or microwave. It is best not to over heat this soup, so 30 seconds in the microwave should do. Finish with a drizzle of fine herb crème fraiche.

Second Course - Preheat oven to 400F. Reheat chicken breast for 2 minutes. Meanwhile heat up veggies and broth either on the range or in the oven alongside the chicken. Do not boil or over reduce the broth as it will get salty and distort the flavor. If using a microwave, plate the veggies and broth, top with chicken and microwave at 30 second intervals until desired temperature. Finish with a drizzle of the sesame-chile oil.

Third Course - Unmold and spoon blueberry as desired.
